giving starbucks a run for their money gluten and dairy free edition?? recipe below 🍋 Lemon loaf recipe 250g almond flour, or 200g gluten free flour + 50g ground almonds (Add 1/2 tsp of xantham gum if its not already in your flour) 3 tsp baking powder 200g sugar, coconut sugar or sweetener 1/4 tsp salt 230g dairy free butter, room temp the zest and juice of 3 lemons 120g almond milk or oat milk Method Set your oven to 180°C In a large bowl whisk together the dry ingredients Once combined, grate in the zest of the lemons, along with the soft dairy free butter Whisk the butter in until the mixture is crumbly Continue to whisk while you add in the eggs, milk and lemon juice Whisk until smooth with no lumps Transfer the batter into a well greased or lined loaf tin Bake for 1 hour until lightly golden on top and a toothpick comes out clean Allow to cool for 15 minutes until gently removing it from the tin Pour over the lemon icing (120g icing sugar: 6tsp lemon juice) Garnish with some lemon slices and serve! ✨ So easy and all in one bowl!
