It’s just as comforting and tastes like regular past – but with an extra protein boost. Win, win! Here’s how to make it: 1lb Banza rigatoni 1 tbsp olive oil 1 yellow onion, diced Salt and pepper, to taste 2 tsp italian seasoning 1 tsp calabrian chili (or red pepper) 1 lb grass-fed ground beef 4.5 oz tomato paste (one tube) 6 cloves garlic, minced (to taste) ½ cup dry white wine (sav blanc, optional) 1 cup full-fat cottage cheese 2-3 tbsp whole milk 1 tbsp butter 1 cup grated Parmesan cheese (more to top) 1 cup frozen peas Fresh basil or parsley, to garnish 1. Blend the cottage cheese with 1-2 tbsp milk, salt, and pepper. Set aside. 2. In a large pot, heat olive oil over medium heat, then sauté the onion with salt, pepper, Italian seasoning, and Calabrian chili for 3-4 minutes. 3. Add in the ground beef and let it sit for 5 minutes to develop a crust, flip, repeat, then break up with a wooden spoon and season with salt and pepper. 4. Clear a center in the pot, add in the tomato paste, and let it cook off for a bit before incorporating with the rest. Stir and add in the garlic. Cook for 30 seconds. 5. Deglaze with white wine. Simmer for 2 minutes, or until reduced. 6. Add the blended cottage cheese to the pot and let it simmer on low. 7. Cook the Banza pasta according to package instructions, drain, rinse with cold water, and set aside. 8. Finish the sauce with butter, Parmesan, and frozen peas. Stir. 9. Add a touch more milk to the jar that had the cottage cheese to pick up any residuals, then pour it into the sauce. 10. Add in the Banza and gently stir until combined. 11. Top with extra Parmesan and basil/parsley. Tuscan White Bean & Sausage Soup ❤️‍🔥 1 lb Italian sausage (or preferred protein) 1 medium onion, finely diced 2 medium carrots, finely diced 2 celery stalks, finely diced diced 2 tsp Italian seasoning
1 tsp calabrian chili (optional) 6 garlic cloves, minced (to taste) 1 tbsp fresh thyme, chopped 1 tbsp fresh rosemary, chopped 3 tbsp tomato paste 1/2 cup dry white wine (optional) 4 cups low-sodium chicken broth 2 (15 oz) cans cannellini or Great Northern beans, drained and rinsed Parmesan rind (optional) Bay leaf 1/2 cup sun-dried tomatoes (to taste) Freshly grated parmesan (about 1 cup) 1/2 cup half and half or cream 2-3 cups fresh spinach or kale Lemon juice, to garnish Crusty bread to dip 1. In a large pot, heat about 1 tbsp of sun-dried tomato oil over medium heat. Sauté the diced onion, celery, and carrot with salt, pepper, Italian seasoning, and calabrian chili for a few minutes. 2. Clear a center in the pot and add your preferred protein. Allow a crust to form, then flip and break up with a wooden spoon. Cook through and combine with the veggies. 3. Add the thyme, rosemary, and minced garlic. Stir and cook for another minute. 4. Clear a center in the pot again and add the tomato paste. Let it cook in the pan for 1-2 minutes before stirring with the rest of the ingredients. Stir and cook for another minute or two. 5. Deglaze with white wine, scraping up any brown bits on the bottom. Let it simmer for 1-2 minutes. 6. Pour in the beans and chicken broth, and season with salt and pepper to taste. Bring to a boil, then reduce heat to low. 7. Add in the parmesan rind and bay leaf. Cover and simmer for 20 minutes. 8. After 20 minutes, discard the bay leaf and parmesan rind (if you can find it) and finish with the sun-dried tomatoes, parmesan cheese, half-and-half, and spinach. Stir until the spinach is wilted. 9. Serve and top with more parmesan, lemon juice, and black pepper. weekend baking always includes sourdough focaccia but this time we’re turning it into a cinnamon roll !!! RECIPE ⬇️ 1. i used my sourdough focaccia recipe on my blog at abrightmoment.com 2. early in the morning, i transferred the fermented focaccia dough to a greased baking dish. 3. in a separate bowl, mixed together 1 cup granulated cane sugar and 1 tablespoon ground cinnamon. also melted 4 tablespoon butter. 4. brush the focaccia dough with half the melted butter then add half the cinnamon-sugar mixture. fold the dough in half then gently stretch out from underneath to fit the pan. 5. grease your hands with olive oil to create some dimples then let rest in a warm environment 3-4 hours to finish rising. 3. before baking, brush the remaining melted butter and cinnamon-sugar on top then create the dimples and bake as normal. 4. let cool at least 20 minutes before adding the glaze. let the glaze rest 10-20 minutes to set, then enjoy!! for the glaze: 1 1/2 cups powdered sugar 1 tbsp milk, or water 1 tsp vanilla extra - mix until smooth, adding a little more water as need for a thick but runny glaze!! #sourdough #sourdoughrecipes #sourdoughfocaccia #focaccia #cinnamonrolls #focacciabread

Stuffed Onions🧅Calling ALL onion lovers📣Loaded with the most delicious savoury filling combining Italian sausage, ground beef, rice and broth. RECIPE LINKED IN BIO AND DOWN BELOW⬇️ ✨These dishes often have more specific names depending on their origin and ingredients. Sogan Dolmas is the Turkish term for stuffed onions and Salantourmasi is the Greek term if you are more familiar with these! 
Ingredients * 1 tsp olive oil * 6 large yellow onions skins removed * 1/2 lb lean ground beef * 1/2 lb ground Italian sausage * 1/2 cup chicken broth * 1/2 cup jasmine rice rinsed, uncooked * 1 can finely chopped tomatoes 398mL * 1 shallot finely chopped * 4 garlic cloves finely chopped * 1/2 tsp salt * 1/4 tsp black pepper * 1/2 tsp fennel seeds crushed to release the flavour * 1/2 tsp dried basil * 1/2 tsp dried oregano * 1/2 tsp onion powder * 1/4 tsp red pepper flakes optional * 1 tsp fresh thyme finely chopped * 1/3 cup fresh Italian parsley finely chopped Sauce: * 1 cup strained tomatoes passata/smooth * 1½ cups chicken broth * 1/4 tsp salt if required Garnish: * balsamic glaze * drizzle of olive oil * fresh parsley chopped Instructions * Preheat your oven to 425 °F.
 * Fill a large pot with water and set to high heat while you prepare the onions.
 * Slice the top and bottom off of the onions and remove the peel.

Using a sharp knife slice the onion halfway (lengthwise) through the layers, cutting until you hit the middle of the onion. This will make a slit in the onion, making it easier (once boiled) to peel back its layers.
 * Once the water is boiling, add the onions, and allow them to simmer for 10-15 minutes. You want to be able to easily peal back its layers, but avoid over-cooking.
 * Remove the onions from the water, add to a colander and allow to cool for 15-20 minutes while you prepare the filling. 
 * To a large frying pan, add the olive oil and set to medium heat.
 * Add the garlic, shallot, ground beef and Italian sausage and begin to fry, breaking up the meat into small pieces with a wooden spoon.
 * Once the meat is nearly cooked and browned, add the salt, pepper, crushed fennel seeds, dried basil, dried oregano, onion powder, and red pepper flakes and let cook for an additional minute.
 * Next, add the rinsed rice, fresh thyme, can of finely chopped tomatoes and chicken broth. 
 * Allow the mixture to cook on medium heat, stirring often, just until the broth is absorbed and the rice is slightly cooked. About 6-7 minutes.

*Don't worry about fully cooking the rice, it will finish cooking in the oven.

Remove the pan from the heat and mix in the Italian parsley.
 * Next, prepare the sauce by mixing together the strained tomatos, chicken broth and salt. 

*Depending if you use a salted chicken broth will determine if you need to add more salt, so taste the tomato sauce before adding it to the onions.
 * To a large oven safe pan, or deep baking dish add a thin layer of the tomato sauce to the bottom of the pan.
 * Next, begin to stuff the onions.

Take each onion layer, add about 2 tbsp of the meat mixture to the centre and gently roll, ensuring the filling stays in tact.

Add the onions seam side down into the prepared pan or baking dish and ensure the onions fit snug.

Repeat until all onions have been used.
 * Pour over the remaining tomato sauce, cover with foil and bake for 30-35 minutes, remove the foil and continue cooking for another 20-30 minutes or until slightly golden and bubbly. The onions should be very soft and slightly caramelized.

Sammy's tip: I like to broil the onions during the last 2 minutes of cook time.
 * Remove the onions from the oven and allow to cool for 10 minutes.
 * Finish with balsamic glaze, a drizzle of olive oil and more fresh parsley.

Trascorso il tempo necessario, scola i broccoli (ricava solo le cimette), unisci tutti gli ingredienti e riduci tutto in un composto ben amalgamato! Non ti resta che dare forma alle tue focaccine; se vuoi renderle più golose, aggiungi il ripieno al centro, e copri con altro impasto. Puoi cuocere in padella (circa 5-7 minuti per lato), oppure al forno (ventilato, 200 gradi per 15 minuti) oppure in friggitrice ad aria (190 gradi per 12 minuti)! Saucy Beef & Broccoli Ramen🥦 This one is a MUST make, especially if you are looking for a simple and delicious dinner that comes together in less than 30 minutes! This one is a family faaaaav!

✨I always switch up the noods for this one - ramen, udon, rice noods - use what you like! Using the @HexClad wok

✨Recipes are ALWAYS linked in my bi0 on sammymontgoms dot com but I will also leave it down below⬇️ Ingredients What You'll Need: * 2 packs ramen or noodles of choice (170 grams total) * 1 lb flank steak thinly sliced * 3 cups broccoli florets chopped into bite sized pieces * 1/4 cup water for steaming the broccoli * 1 tsp sesame oil * 1 tsp worcestershire The Sauce: * 2 tbsp olive oil * 1 tsp sesame oil * 1 tbsp rice wine vinegar * 1/4 cup soy sauce low sodium * 1 tbsp oyster sauce * 1/2 cup beef broth unsalted or low sodium * 1 tbsp sriracha * 1 tbsp honey * 1 heaping tbsp cornstarch * 3 garlic cloves chopped fine * 1 tbsp fresh ginger chopped fine * 1/4 tsp red pepper flakes Garnish: * sesame seeds optional * green onions optional * peanuts optional Instructions * Begin by cooking your ramen or noodle of choice. 

Cook according to package instructions but take it off the heat 2 minutes before it's finished cooking, as it will continue cooking when you add it to the pan.

Strain and set aside until ready to use.
 * Prepare the steak by slicing it into thin, bite sized pieces and add it to a medium sized bowl.

(see my tips and faq's above to achieve perfectly sliced beef)

Add the sesame oil and worcestershire to the beef and gently mix to combine. 

Let rest while you prepare everything else.
 * Wash and chop your broccoli into bite sized pieces and set aside until ready to use.
 * To a small bowl, combine all of the ingredients (cornstarch last) and whisk until no clumps remain. 
 * To a large frying pan set to medium/high heat, add a splash of canola oil or peanut oil and once hot, add the beef. 
 * Fry the beef for 2-3 minutes, just until browned and cooked to your liking.
 * Remove the beef from the pan and set aside momentarily, and reduce the heat to medium.
 * Add the broccoli and water, cover with a lid and allow the broccoli to steam for 2-3 minutes, or until cooked to your preferance.
 * Next, reduce the heat to low/medium, return the beef to the pan, followed by the ramen and pour over the sauce.
 * Bring to a light simmer for 3-5 minutes, or until the sauce has thickened.

Gently toss until everything is mixed together and coated evenly.

Taste here to see if you need to adjust the seasoning. 

(This will depend if you used a salted beef broth and low sodium soy sauce)
 * Remove from the heat, garnish with sesame seeds, green onions and peanuts.
