Tequila Lime Salmon with Mango Avocado Salsa - For the Salmon: 4 Salmon Fillets 1/2 cup tequila blanco or reposado 1/2 cup orange juice 2 tablespoons extra virgin olive oil 1 tablespoon chopped fresh cilantro 1 tablespoon minced jalapeno 1/2 teaspoon granulated garlic 1 teaspoon ground cumin Kosher salt, to taste For the Mango Salsa: 1 large mango, peeled and cubed 1 large avocado, peeled and cubed 1/4 cup chopped fresh cilantro 1/4 cup chopped white onion 1 lime, juice Kosher salt and freshly cracked pepper, to taste (Corn tortillas, for serving) Preheat oven to 375 degrees Fahrenheit. Marinade salmon in all listed ingredients for 30 minutes. Place on a baking sheet lined with parchment paper. Bake for 18-20 minutes. Meanwhile combine all salsa ingredients in a large bowl.
