Simple Ice Cream Base 🍨 Heat 1 3/4 cup whole milk and 1 3/4 heavy cream in a medium saucepan. Calculate or estimate the amount of sugar in the flavoring ingredient and subtract that amount from 3/4 cup (150 grams) of granulated sugar. Add 1/4 tsp xantahn gum to the granulated sugar and mix, then add to the saucepan along with 2 Tbsp corn syrup or glucose syrup. Stir until fully combined and all the sugars have melted. Add the heated base to the flavoring ingredient and mix to combine. Strain any unwanted solids and refrigerate for a few hours until completely chilled. Churn in an ice cream maker and enjoy immediately as a soft serve consistency or transfer to a container and freezer overnight for a more scoop-able consistency.
