Over 1 million people LOVED this last time I posted it on Instagram, so here it is again for my new followers. 🔥 The easiest high-protein, low-calorie meal prep you NEED to try! 🔥 🥔 Veggie-Packed Frittata – A meal prep hero that’s loaded with veggies, keeps you full, and is perfect for busy days! 💡 Why you’ll love it: ✅ High in protein ✅ Packed with veggies ✅ Easy to make ✅ Meal prep & freezer-friendly Makes 8 serves Ingredients: 🥔 1kg potato, chopped 🎃 400g pumpkin, chopped 🫑 1 large capsicum, chopped 🥒 1 large zucchini, chopped 🍄 100g mushrooms, chopped 🥬 Few cups chopped kale 🧀 500g low-fat cottage cheese 🥚 16 large eggs 🥛 1/2 cup milk of choice 🧀 200g feta 🧂 Seasoning: salt, pepper, Italian herbs, garlic powder, onion powder Method: 1️⃣ Preheat oven to 180C (160 fan forced) & lightly spray a large baking dish. 2️⃣ Add all chopped veggies into the dish & mix. 3️⃣ In a bowl, whisk eggs, cottage cheese, milk & seasoning.
