quinoa blueberry pudding - don’t knock it till ya try it!! recipe: ingredients: -3/4 rinsed quinoa -1 1/2 cup water -2 tbsp maple syrup -1 cup blueberries heated & mashed -1 cup canned coconut milk -1 cup almond milk -1 tsp vanilla extract Cook on medium 10-12 minutes as it thickens 1. add the quinoa and water into a saucepan and bring to a boil. once boiling, reduce to a simmer & stir occasionally for about 12-15 minutes, until the quinoa is cooked. 2. while that’s cooking, heat up frozen blueberries for about a minute & then mash. leave a few not as much mashed for texture. 3. then, mix in the coconut & almond milk, maple syrup, & blueberries into the quinoa and bring it to a light boil for about 7-8 minutes, mixing well. 4. remove from heat and let sit for another 5-10 minutes to thicken even more. enjoy. #EasyRecipe #cookingathome #healthyrecipe #proteinrecipe #EasyRecipes
