Strawberry & Burrata Salad 🍓☀️ AD The perfect Summer salad tbh. All thanks to @Sainsbury’s Taste The Difference Strawberries. Ingredients: 250g Taste the Difference Strawberries, sliced Drizzle of balsamic glaze 100g rocket ½ cucumber, sliced 1 ball of burrata cheese 80g pistachios, chopped Handful of pickled red onions (optional) Black pepper Method: Slice the strawberries and toss them in a bowl with a drizzle of balsamic glaze. Halve the cucumber and roughly crush the pistachios. On a bed of fresh rocket, layer the balsamic strawberries, cucumber, and generous spoonfuls of creamy burrata. Add a few slices of pickled red onion (optional), then finish with some black pepper, crushed pistachios, and another drizzle of balsamic glaze. You can add some chopped basil too. Serve as a gorgeous summer lunch or as a side during your midweek BBQ! So good. TTD Strawberries 250g. Air Fryer Peach Toast 🍑 AD I think I've found my go-to summer lunch thanks to @Sainsbury’s ☀️ This recipe is so simple but SO good, and that Taste the Difference Sourdough? Game changer. Ingredients: 1 slice of Taste the Difference Stonebaked Sourdough Drizzle of Olive oil Black pepper 2-3 tbsp cottage cheese 1 peach, sliced 2 tsp hot honey Fresh basil to garnish Method: Slice the sourdough pave and drizzle with a little olive oil. Air fry at 200°C for 7–8 minutes until golden and crisp. Meanwhile, slice the peaches and sauté them in a pan with a splash of olive oil and a pinch of black pepper. Cook for a few minutes until they begin to soften and caramelise slightly. Spread a generous layer of cottage cheese over the toasted sourdough, then top with the warm peaches. Drizzle over some hot honey and finish with a few fresh basil leaves. TTD Stonebaked Sourdough Pave 400g. Air Fryer Tandoori Chicken Sliders 370 calories per slider Serves 4 I’ve always been a fan of tandoori chicken, and these sliders take that love to a whole new level with garlic butter, cheese and a coriander salsa. My new book Healthy Fakeaways is HALF PRICE so go preorder it💙 Ingredients: Coat 3-4 chicken breasts in: 2-3 tbsp Greek yoghurt 2 tsp tandoori curry powder 1/2 tsp cumin 1tsp coriander 1/2 tsp garam masala 1 tsp garlic puree Salt and pepper ½ lemon, squeezed A few drops red food colouring (optional) Serve with: 4 brioche baps 4 slices of mozzarella 8 cherry tomatoes diced Handful of fresh coriander Garlic butter (optional) Method: 1. Cut your chicken breasts into bite size chunks and add to a bowl with all the ingredients above and mix until chicken is coated. 2. Air fry for 12-14 minutes at 180 or until cooked through. 3. Grab your brioche baps and add to an oven proof dish, add your mozzarella slices, your chicken then top with a nice tomato and coriander mix. Add the top of the buns and brush with some garlic butter. 4. Air fry at 180 for 3-4 minutes (or until the cheese is nice and melted). Easy Irish Potato Bread or Potato Farls🥔 Makes 10-12 slices   A staple here in Ireland. You can’t beat a bit of fried potato bread with a fry on a Sunday morning. Have you ever tried it before? Let me know what you think 😄   Ingredients:  3 medium to large potatoes peeled 1 big dollop of butter  120g plain flour plus extra for dusting  3/4 tsp baking powder  Salt  1. First boil the potatoes for 20-25 mins so they are super soft. Mash them with the butter and allow to cool 2. Add in the flour, baking powder and salt and mix to a dough 3. Add to a floured surface, roll into a pancake sized thickness and cut into squares 4. Fry on a dry pan for 4-5 mins on each side. Air Fryer Chip Butty 🍟 Sometimes, all you want for dinner is a chip butty, nothing fancy but it hits. I add some salt and vinegar crisps, I used the good old Irish Tayto Controversial though, do you prefer southern or northern Tayto? Ingredients: - 2 slices of pan bread - Butter - Air fried gastro chips - Salt and vinegar - Salt and vinegar crisps Method: 1. Pop your frozen chips in the air fryer and cook as per packet instructions.
 2. Butter some bread and top with some of your cooked chips and top with some salt and vinegar. Add some salt and vinegar crisps on top and add your final slice of bread 3. Frozen Raspberry Ruffle Bars 🍫 Such an easy treat for during the summer, using only four ingredients but you can add more. I’m seeing these everywhere at the moment, first on @littleloucooks @jasmineseats 246 calories per bar Serves 8 Ingredients: - 225g frozen raspberries - 120g desiccated coconut - 3 tbsp honey - 100g dark chocolate - 10g coconut oil (optional) Method: 1. Add the frozen raspberries, desiccated coconut, and honey to a blender or food processor, and blitz until well combined. 2. Transfer the mixture to a lined baking tin, pressing it down evenly. Freeze for at least 2 hours, or ideally overnight, until firm
 3. Melt the chocolate. 4. Remove the raspberry mixture from the freezer and slice into bar shapes.

Air Fryer Garlic Parmesan Chicken Skewers 🍗  If you’re a fan of garlic Parmesan fries you need to try these garlic Parmesan chicken skewers… they taste incredible. Coat 2/3 chicken breasts in: * 1 tbsp oil  * 1 tsp paprika  * 1 tsp garlic granules  * Salt and pepper  For the garlic Parmesan sauce, mix together:  * 100g melted butter  * 2/3 chicken breasts * 75g Parmesan  * Handful of chopped parsley  * 4 cloves of garlic, minced  * Salt and pepper  * Chilli flakes (optional) Method: 1. Cut your chicken into long chunks and marinate in some oil, garlic granules, paprika, salt and pepper  2. Pop your chicken onto skewers and place in the air fryer for 20 minutes at 190 3. Prepare your garlic Parmesan mixture by melting your butter and mix with Parmesan; parsley, garlic, salt and pepper  4. After the chicken is cooked, baste in the sauce and cook for another 5 minutes  5. Let the chicken cool and enjoy! Airfryer Pesto Chicken Wrap 🍅 (400 calories per wrap) Perfect for busy weekdays or a quick work from home lunch. Ingredients: - 1x tortilla wrap - 20g green pesto (you can use reduced fat) - 30g light mayo - 20g grated mozzarella - ½ cooked chicken breast, sliced - 3 cherry tomatoes, sliced - ½ tsp mixed herbs - Few sprays oil spray or @frylighthq to help the cheese and herbs stick Method: 1. Add pesto to one half of your wrap then add your chicken, cheese, tomatoes and some light mayo. Slowcooker Creamy Chicken & Chorizo Orzo 🍅 Creamy Orzo with Chicken, Sun-dried tomato & chorizo, kind of a crossover between pasta and a risotto vibe. A twist on one of my absolute favourite slowcooker pasta recipes. Ingredients - 3 x chicken breasts - 2 tbsp red pesto - 100g cooked chorizo - Handful of Sundried tomatoes 🍅 - 1 tbsp basil or mixed herbs - 4 garlic cloves - 100ml of stock + 700ml for pasta - 230g of dry orzo - 200ml double cream - Handful of spinach or basil - Sweet peppers - Salt and pepper 1. Cook the chorizo briefly for 1 min 2. Add to the slowcooker with chicken, pesto, Sundried tomatoes, garlic, basil, 100ml of stock & salt and pepper 3. Cook on high for 2-3 hours or low for double that 4. Add in 230g of dry orzo, 700ml of stock & the peppers. Cook for a further 50 mins 5. Simple Chocolate Cornflake Bites 🍫 JUST 4 ingredients if you use chocolate, but you can skip that and have these without chocolate. They’re a dupe of the M&S cornflake bites that I eat by the bucket Ingredients: - 120g cornflakes - 120g salted butter, diced - 100g soft brown sugar For dipping: - 200g of milk or dark chocolate - Optional, 1 tbsp of coconut oil & Flaky sea salt Method: 1. Add your diced butter and brown sugar to a saucepan and cook on medium heat until it starts to bubble.
 2. To a large bowl, add your cornflakes and the sugar/butter mixture then add to a lined baking tray.
 3. Cook for 10-12 minutes at 180 then leave to cool

Air Fryer S&P Chicken Spice Bag    If you’ve ever been to Ireland, you’ll know how much we love a salt and pepper chicken spice bag. You can make your own chicken strips but frozen works just as well! Don’t forget to preorder my fakeaway book Healthy Fakeaways   Ingredients:    - 300g chicken, cut into strips  - 3 tbsp cornflour  - 1 x egg, beaten  - 1 x red pepper  - 1 x green pepper  - 1 x onion  - 500g Frozen chips  - Curry sauce (I use Mayflower)     Spice Bag Mix:  - 1 tbsp 5 spice  - 1 tsp mild chilli powder  - 1 tsp garlic powder  - 1/2 tsp chilli flakes  - 1/2 tsp cinnamon  1/2 tsp ginger  1 tbsp sweetener  salt and pepper    Method:  1. If using fresh chicken, dip the chicken breast strips into beaten egg, then coat in cornflour. Air fry at 200°C for 12 minutes, or until cooked through. If using frozen chicken strips, cook according to the packet instructions.  2. For the chips, air fry at 200°C for 15–20 minutes, following the packet instructions. (If you have a dual-basket air fryer, cook the chicken and chips at the same time.)  3. While the chicken and chips are cooking, slice your vegetables and mix your spices together in a small bowl.  4. Heat a little oil in a large pan over medium heat. Add the peppers and onions along with half of the spice mix. Stir-fry for 3–4 minutes until just softened.  5. Add the cooked chicken and chips to the pan, sprinkle in the remaining spice mix, and toss everything together until well coated.  6. Slow Cooker Cajun Chicken Pasta Bake 🍝 This is such an easy midweek dinner, low effort to throw together and costs only £2.94 per portion. Serves 4 512 calories Ingredients: - 4 chicken breasts, cut into chunks - 2 peppers, chopped - 1 red onion, chopped - 3 garlic cloves, minced - Handful of chopped parsley - 1 tin (400g) chopped tomatoes - 2 tbsp hot sauce - 3 tbsp Cajun seasoning - 1 tbsp mixed herbs - 2 tbsp philadelpia or a soft cheese - 100g light mozzarella or cheddar - 250g spiral pasta, cooked Method: 1. Add all the ingredients to the slow cooker except the peppers, parsley, cheese and pasta. Cook on high for 3–4 hours on high or 7 on low. 2. When the time's up, cook your pasta separately, then stir it into the slow cooker along with the chopped peppers and 2 tablespoons of soft cheese. Mix everything well until creamy. 3. Sprinkle grated mozzarella or cheddar over the top (OPTIONAL) place the slow cooker pot without the lid under the grill for about 5 minutes, until the cheese is melted and golden. Air Fryer Hot Honey Chicken Crunch Wraps 🌯 Wraps are so underrated but this way with hot honey chicken and sticky halloumi really hits. My new cookbook Healthy Fakeaways is half price on preorder :) Ingredients:  - 2 chicken breasts   - 1 tbsp Cajun   - 60g cornflakes   - 1 egg, beaten   - 1/2 block of halloumi   - Handful of lettuce    - 2 large wraps   - Perinaise or a spicy mayo For the hot honey:  3 tbsp honey   2 tsp franks hot sauce   Method:  1. Crush your cornflakes and add to a plate, add your beaten egg to a small bowl and then dip your chicken breasts into the egg and then into the crushed cornflakes 2. Add the chicken to the air fryer and cook for 17 minutes at 180 or until cooked 3. Prepare your hot honey by mixing together some honey with Frank’s hot sauce   4. Fry off your halloumi on a pan with some honey 5. When your chicken is cooked, drizzle the hot honey over the chicken and cut into pieces   6. Cut your wrap in the centre until the middle then add lettuce to one quarter, your chicken in another, your perinaise in another and then your halloumi pieces in the last quarter 7. Creamy Pesto Chicken Pasta Salad 🍅   The perfect prep ahead pasta salad. You can’t go wrong with pesto chicken and pasta. This can be had hot or cold Serves 4 Ingredients: - 2 cooked chicken breasts, cut into chunks - 200g cooked pasta of choice - 170g sundried tomatoes, chopped - Handful of fresh basil, diced - 1 big handful of rocket - 1-2 tbsp parmesan, grated   For the dressing: - 2 tbsp green pesto - 5 tbsp mayo - Juice of 1 lemon - Salt and pepper   Method: 1. To a bowl, make your dressing by mixing all the ingredients above 2. To the same bowl, add your cooked pasta, cooked chicken, sundried tomatoes, rocket, basil and some grated parmesan 3. Airfryer Chicken Caesar Burger 🥓  Serves 2 The summer burger you need, with a twist. My new book Healthy Fakeaways is available to preorder and it’s half price 📕 Coat the chicken breasts in - 1 tsp paprika - 1 tsp oregano - 1 egg - 100g crushed cornflakes    Ingredients * Romaine/Baby Leaf Lettuce   * 2 brioche buns   * 50g Parmesan, grated   * Pre-cooked crispy bacon  
 * 2-3 tbsp store bought Caesar salad dressing or make your own using:   * 2 tbsp garlic mayo   * Juice of half a lemon   * 2 tbsp parmesan  * 1 tsp Dijon mustard   * 1 tsp Worcestershire sauce    * Parmesan * Salt and pepper 

 Method:    1. Flatten your chicken breast using a meat tenderiser (or feel free to use a rolling pin).    2. Coat the chicken breast in 1 tsp of paprika and 1 tsp of oregano.   3. Dip each chicken breast into egg on both sides, then into the crushed corn flakes – making sure to coat equally.  4. Pop the chicken breasts in the air fryer and cook for 15 minutes at 180°C (355°F).  5. While chicken is in the air fryer, chop some baby gem lettuce and mix with some of your Caesar dressing. Toast your brioche buns, and cut up some of your pre-cooked bacon so it makes a nice bacon crumb.   6. When chicken is done, start assembling your chicken burger by adding your sauce first, then your chicken, and top with your lettuce mix, bacon crumb and parmesan.   7. Add more sauce on top if you’d like and enjoy 🙂

Easy Irish Soda Bread Farls 🥓🍳   If you’ve ever been to Ireland, you’ve probably had a fry-up, complete with soda bread on the side. Soda bread is typically paired with sausage, bacon, and eggs, but why stop there? Here is a pan and airfryer version, the airfryer does make them a lot bigger.   Ingredients:  * 390g soda bread flour  * ½ pint buttermilk  * 1 tbsp rapeseed or veg oil  * Pinch of salt 

Method:  1. Sieve your soda bread flour into a large mixing bowl  2. Pour half a pint of buttermilk into a jug with 1 tbsp oil, and mix  3. Add this mixture gradually to the flour along with a pinch of salt and mix with a fork. It will slowly come together and form into a dough  4. Knead for 5 mins, Shape your dough on a floured surface into a flat circle and cut into quarters. 5. Once the dough is cut, place the floured soda bread on a frying pan (low to medium heat) for 8 minutes on each side. Be sure to flour the top of the soda bread before flipping. You can also cook these in the air fryer for 10 minutes at 160, flip and cook for another 5 minutes.  6. Once cooked, allow the soda breads to cool and serve. Personally, I love soda bread with bacon, eggs and brown sauce.

I’ve taken 3 months out 😬… but for a good reason. This account was set up during lockdown and it’s become something truly special thanks to all of you guys. Before I set BOL up as a lockdown hobby I was working in my job after university. Bored of lunch started but tbh nobody trains you for that. I had never worked with food or stepped in a professional kitchen, the imposter syndrome is real. So im training to be a a bit of a chef. I’m at @Ballymaloe Cookery School in Cork, being trained by the world class Rachel Allen, Rory OConnell along with so many other fantastic teachers.
