This is my way of making garam masala. Everybody has their very own version. Garam Masala is not the same as Masala. “Garam masala is a warming spice blend Garam" translates to "hot" or "warm," and "masala" means "spice mix," but it's not spicy in the fiery sense. It's a complex blend of aromatic and warm spices, often including cinnamon, cloves, cardamom, cumin, coriander, and peppercorns. “ This is also used as a garnish or at the end of the cooking process in India but in SA we add it with our other spices during the cooking process Masala is a South African blend where chilli powder is used as the base and this usually forms the base of a curry or indian dish. INGREDIENTS 75 gram fennel seeds 25 gram star anise 3 whole cinnamon sticks 15 gram cloves 15 gram green cardamom pods 15 gram black peppercorns 6 bay leaf

This dish was made in a rush so not a very polished video. Add as required Bake at 180 degrees Celsius for about 15 minutes. This will also depend on the thickness of the scones

My mum makes the best fish biryani. I tried making mine close to hers with a few changes. Tastes so delicious and even better the next day Fish Biryani FISH BIRYANI PREP TIME 30 MINS COOK TIME 45 MINS MAKES PORTIONS 4 INGREDIENTS Marinade 1kg fish 1 tablespoon ginger/garlic paste 1 tablespoon masala 1 tablespoon ground cumin 1 teaspoon ground fennel 1 tablespoon chilli powder rind and juice of 1 lemon 1 teaspoon salt Rice 1&1/4 cup basmati rice 4 cups water 2 cinnamon stick 1 bay leaf 8 cardamom pods 4 cloves 3 lemon slices Few mint leaves salt egg yellow food coloring Fish Biryani 1/3 cup vegetable oil 3 large onions, thinly sliced 2 sprig curry leaf 2 green chillies 1 teaspoon garlic paste 1 teaspoon ginger paste 1 teaspoon turmeric 2 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon ground soomph/fennel 1 tablespoon masala 2 teaspoon biryani masala 2 teaspoon Kashmiri chilli powder 5 smalll roma tomatoes skin removed and pureed (makes about 1 cup) 4 sprigs thyme 1/4 cup mint leaves chopped Fresh coriander salt 75 gram butter 4 boiled eggs - you can fry this if you wish, in a little oil with some masala (optional) 1 cup of hot water plus extra INSTRUCTIONS Marinade Marinate the fish with the masala, ginger garlic paste, cumin, salt, fennel and lemon rind and juice. Refrigerate for an hour Rice Rinse the rice well. Cover the rice with water, add the cinnamon stick, bay leaf, cardamom pods, cloves, lemon slices and salt. Cook until the rice is half cooked. Remove the lemon slices. Drain the excess water, sprinkle some egg yellow food coloring on top of the rice, cover and set aside When the rice is ready to be used you will fluff the rice with a fork so you will get a few different shades of rice. Fry 2 onion until golden and crisp and set aside Biryani Heat the oil in a large pot.Sear the fish on both sides, just a few seconds each until it browns a little on the edges. Do not cook it for too long as it will cook further in the oven. Remove and set aside In the same oil add one onion with the thyme and curry leaf. Fry until the onion is golden brown. Add the spices, turmeric, masala, cumin, coriander, and fennel. Fry for at least 30 seconds. Add a few drops of water if required Add in the pureed tomatoes and any excess marinade from the fish. Season with salt. Add the chopped mint leaves and chillies. Cover and simmer until the tomatoes are cooked, about 10-12 minutes. If it gets too dry you can add a little bit of water Remove half the tomato mixture and place in a bowl. Remove all the thyme stems. Layer half the fish on top of the tomato mixture in the pot. Fluff up the rice with a fork and place half the rice on top of the fish. Spread the other half of the tomato mixture on top of the rice. Layer the remaining fish and boiled eggs (if using) on top. Sprinkle the rice on top. Scatter the onion on top of the rice. Cut the butter into little cubes and "tuck" it into the rice. Sprinkle fresh coriander and more mint on top. Pour a cup of warm water over the biryani and cook in the oven at 180 degrees Celsius for 30 minutes or until the rice is tender. If the liquid dries up before the rice is cooked, you can add another cup of water and cook further. Garnish with fresh coriander. Serve with Raita
I think I feel this way because I’m not a huge milk tart fan. It wasn’t a bad recipe but I felt it could be better. This is to show you that we don’t always get everything right Ingredients 1 packet tennis biscuit 100g butter, melted Crumb the biscuits and mix in the butter. Grease a baking pan and press the biscuits into the base. Set aside Add to a pan 1 tin condensed milk 700milk 2 teaspoon vanilla essence Simmer until it comes to boil Separate 2 eggs yolks and the whites Whisk the whites and set aside Add an extra egg to the egg yolks and mix in 1/3 cup cornflour Add a ladle full of milk mixture to the egg mixture and slowly drizzle it into the milk mixture, whilst whisking. Keep whisking for about 5-7 minutes until thick Remove from heat/ Whisk in the egg whites Pour into the base and allow to set for at least 8 hours. Sprinkle a teaspoon of cinnamon on top
