Your mind is playing tricks on you my dear… I can’t believe how much it’s improved 🥹 almost 3 years ago, I had the surgery on my wrist to remove a tendon. Yes, it’s not fully straight but that was never the aim. The surgery wasn’t as successful as the surgeon originally planned as he had to change his approach mid surgery BUT my wrist is straighter, the joint is in so much less pain, the skin is better and my fingers can move freely again. I can use my hand and I am so much more independent now than how I was back then. Sooo thankful for the progress I have made 🥹✨ #thenandnow #progress #crps #emotional #trending
One year ago today 🤍 and I’m taking it on again in six days… This was honestly one of the best days of my life. Watching this video back makes me so proud for persevering. Exactly what I needed to watch to get me through this maranoia I’ve currently got. I am so determined to do myself proud again. 1 month of stress-free dinners for 99p - code “SALTY” - join now🔥 Fakeaway Sweet & Sour Chicken 🤤 Ingredients For the chicken: • 500g chicken breast or thighs, diced • 4 tbsp cornflour • Salt and pepper • ¼ tsp MSG (optional) • Oil for frying (vegetable or sunflower) For the sauce: • 3 tbsp ketchup • 2 tbsp rice vinegar (or white vinegar) • 1.5 tbsp light soy sauce • 3 tbsp brown sugar • 1 tbsp pineapple juice or water • 1 tsp cornflour mixed with 2 tbsp water (slurry) • ¼ tsp MSG (optional) Veg: • 1 red pepper, chopped • 1 green pepper, chopped • 1 onion, chopped • ½ tin pineapple chunks (juice reserved) To serve: • 250g jasmine or basmati rice • Spring onions & sesame seeds (optional) 1. Wash your rice until the water runs clear. Water from rice up to first knuckle. Bring to boil, simmer for 10-15 minutes. Off heat & steam. 2. Coat the chicken in cornflour mixed with a pinch of salt, pepper, and MSG (if using). Toss well to coat evenly. 3. Fry the chicken in hot oil until crispy and golden. Remove and drain on kitchen paper. 4. Sauté the veg (peppers, onion, pineapple) in a large pan or wok over medium-high heat for 3–4 mins. 5. Stir together the sauce: ketchup, vinegar, soy sauce, sugar, pineapple juice, and MSG (if using). Add to the veg and simmer for 2–3 minutes. 6. Add the cornflour slurry, stir until the sauce thickens and gets glossy. (Optional - I didn’t need to do this - depending on how thick or runny your sauce is) 7. Toss the crispy chicken into the sauce just before serving for max crunch. 8. Spaghetti Bolognese (beef & lentils) 🍝 Ingredients: - 500g beef mince @MagnessFarmsButchers - 1 tin lentils - 1 carrot, diced - 2 stalks celery, diced - half onion, diced - 60g dry pasta per person - 2-3 garlic cloves, minced - 1 tbsp tomato puree - 1 tbsp Worcestershire sauce - t tsp thyme, oregano - tin of tinned tomatoes - 1 beef stock cube - 100ml water - salt & pepper 1. Brown off your veggies & mince with garlic, salt & pepper for 5-10 mins 2. Add your tomato purée, cook off for 5 mins. Add your tinned tomatoes, lentils, stock, water, thyme & oregano. Simmer for 10-20 mins (you can do for a few hours to really build flavour) 3. Boil your water in a pan, add your pasta with a good pinch of salt & cook for around 10 mins (check your packet) 4. Homemade KFC Hot Wings 🍗 Sorry KFC… these homemade hot wings are hotter, crispier, and cost just £2.19 for 22 wings. 👨🍳 Ingredients (22 wings): 1kg Chicken Wings 200ml Buttermilk 1 tsp Paprika 1 tsp Garlic Powder 1 tsp Cayenne Pepper 1 tsp Salt Coating Ingredients: 200g Plain Flour 60g Corn Flour 1 tsp Baking Powder 2 tsp Paprika 2 tsp Cayenne Pepper 1 tsp Garlic Powder 1 tsp Ground Ginger 1 tsp Mustard Powder 1 tsp Dried Thyme 1 tsp Dried Oregano 1 tsp Dried Basil 1 tsp White Pepper 1 tsp Black Pepper 1 tsp Celery Salt 1 tsp Salt Method: 1. Mix all of the marinade ingredients together. Add the chicken wings and marinate for 2 hours. 2. Mix all of the coating ingredients together. Theme parks are meant to be fun — but what if just getting on a ride feels like an obstacle course? I had a great day at @Alton Towers Resort and wanted to bring you along as part of my Beyond Limits series, but there were definitely some barriers that made the experience harder than it needed to be as a wheelchair user. Transferring into the ride vehicles was one of the biggest challenges — the high sides made it really difficult. In the U.S., I went on rides with flip-down side panels that become transfer boards, separate boarding areas so you can take your time getting on or transfer aids that could be used to bump down to lower ride vehicles. That kind of design would make a massive difference here- and I think it’s definitely do-able! The app also kept directing us through inaccessible routes, which ate up a lot of our time just figuring out how to get around. (Went flying out my chair at one point 🤣😅) If you have access needs, that’s something to be really aware of. Before going, I was told I’d only be able to go on two rides because of limb-pressure requirements — but on the day, the operators were great and let me on all of them as long as I could transfer independently. There were a few near misses with the transfers and my arms were definitely aching the next day but it was so worth it. Big thank you to all the workers at the park who made my day as enjoyable as possible!! So grateful for the fun — but accessibility shouldn’t be a bonus. It should be built-in.
